Ingredients:

6-8 fresh mint leaves 

1 ½ teaspoons of brown sugar

2 ounces coconut

1 ounce soda water 

Rim: Coconut cream and toasted coconut flakes

Preparation:

Dip the rim of a rocks glass in some coconut cream then roll the moistened rim in toasted coconut flakes.

In a prepared glass, add the mint leaves, brown sugar, and lime juice.

Using a muddler, gently (yet firmly) muddle the ingredients.

Then fill with ice and add the rum, coconut water, and coconut cream.

Stir well and top with soda water.

 Are you looking for an easy Christmas cookie recipe?

Look no further because these Rudolph’s Nose Christmas cookies are quick, easy, and delicious. They are my go-to when making Christmas cookies with my nieces. 

My friend Stephanie brought these over during the holidays once and we all loved them. When I asked her for the recipe, I couldn’t believe how easy they were to make. I love cake box recipes because they are always easy recipes to make.

Rudolph’s Nose Christmas Cookies

Ingredients:

1 box (18.25 oz) Devil’s food cake mix

1/2 cup all-purpose flour

1/2 cup butter or margarine, melted

1 egg

Vanilla frosting (about 1/2 tub per batch)

Maraschino cherries (no stems)

Directions:

Mix the first four ingredients into a stiff dough. (Dough dries quickly and then is hard to roll–add a little oil to help with the dry-out factor, if needed.

Roll the dough into 1-inch balls. Press an indentation into a ball (with the round end of a wooden spoon or something like that).

Place 2 inches apart on a greased baking sheet. Bake at 350 degrees for 10-11 minutes. If dough is puffed, use the end of a wooden spoon to recreate indentation.

Cool for one minute. Remove from pan and continue to cool. Spread frosting into the indention (or apply with star-tipped pastry bag). Top with a cherry.

1 tsp cream of tartar

1/2 C crushed candy canes

Directions:

Preheat oven to 325 degrees

Tear off a sheet of parchment paper long enough to fit a 9×13 baking dish

In a standing mixer, combine butter, powdered sugar, egg, and vanilla and mix on medium speed until combined and fluffy

In a large bowl, combine the flour, baking soda, and cream of tartar.

Gradually add in the flour to the wet mixture and mix on low speed until combined

Stir in the candy canes

Scoop dough into the baking dish and press down with your fingers

Bake for 20-25 minutes or until golden brown

Place onto a wire rack to cool completely

Peppermint Frosting ingredients:

2 C unsalted sweet cream butter, softened

3 C powder sugar

3 tbsp heavy whipping cream

1 tsp peppermint extract

1 C crushed candy canes to sprinkle on top

Frosting directions:

Using a standing mixer, combine all ingredients (except the crushed candy canes) and mix on medium speed until combined and stiff peaks.

Scoop the frosting onto the cooled cookie bars and frost

Sprinkle with candy canes

Place the bars in the fridge for 30 minutes to an hour for the frosting to harden

Use a sharp knife and cut into bars

Are you wondering what to do with all that leftover turkey?

I’ve tried many different ways to use up leftover turkey over the years. One year I used turkey instead in my spicy chicken spaghetti recipe and another year I used leftover turkey in my White Chicken Chili recipe

This year my suggestion is to make some soup in your crockpot with it. It’s easy to make and oh-so good. Plus, you will use up other food items leftover from Thanksgiving like gravy, apples, corn, carrots, and onions. 

Leftover Turkey Soup – Crockpot Recipe

Ingredients:

2 C apple juice
1 can chicken stock
½ C diced peeled apples
1 can peas, drained and rinsed
1 can sliced carrots, drained and rinsed
1 can corn, drained and rinsed
½ Spanish onion, diced
1/ 2 jar of turkey gravy
2 tsp ginger
salt and pepper to taste
2 C cooked turkey, shredded
1 package Rotteli pasta
Olive oil spray

Bread bowls

Directions: 

Apple Turkey Soup - Crockpot Recipe

Spray your crockpot with olive oil spray. Add the apple juice and chicken stock to the crockpot. Turn the crockpot on medium heat and continue to add the ingredients (except the pasta). Stir the ingredients to blend the ingredients together. Heat for 5 hours. Add the pasta, stirring to mix well and cook for an additional hour. Before serving the soup, spoon it into each bread bowl. (Or just a regular bowl and serve with some bread!)

It’s almost Halloween! One super fun way to celebrate is Halloween themed food like these Monster Donuts. These monster donuts are super easy to make, in fact they are so easy to create your kids can easily put them together. They are the perfect Halloween treat and fun kid activity.  

How to Make Monster Donuts

Ingredients:Monster Donut ingredients

1 package of the following:

Candy Melts – whatever colors you like

Prepackaged dozen donuts (glazed, cake, yeast, powdered, whatever you like!)

candy corn

candy eyeballs

fun Halloween sprinkles

plastic vampire teeth

a few teaspoons of olive or coconut oil

sandwich size zip bags

(I was able to find everything I needed at Walmart)

Directions:

  1. Add ¾ cup of candy melts and 1 tsp of oil in a small microwavable dish. Heat in 30-second intervals stirring after each until smooth. (Do this for each individual color)
  2. Spoon the chocolate mixture onto the donut to coat and decorate as desired. Place candy corn for teeth or use the vampire’s teeth.
  3. Add the chocolate mixture to zip-lock bags, then snip the corner off to use like a piping bag for mummy effect, polka-dots, stripes, and more. You can also dot a small amount on the back of the eyes to “glue” them on.
  4. Use your creativity and have fun! Let the kids decorate their own!
  5. Let sit a room temperature for about 10 minutes to fully “set up”. Store in an airtight container for up to one week.

I just took a cooking class at the Kitchen at Middleground Farms out in Wilsonville, Oregon south of Portland during a press tour of Oregon. We didn’t make any cocktails, but we made a pork loin with maple syrup that was amazing. That got me on a maple syrup kick and I always seem to have bourbon on hand for some reason or another and if it is fall season, there’s always apple cider in the house! So, with those three things sitting around, the next thing I know, I’ve got myself a maple bourbon apple cider cocktail.

Maple Bourbon Apple Cider Cocktail Recipe

MAPLE BOURBON APPLE CIDER

Ingredients:

 
2 cups apple cider
1/4 cup bourbon whiskey
2 tbsp pure maple syrup
1 tbsp simple syrup
 

Instructions:

 
In a medium-sized saucepan on low heat, combine all i
ngredients and stir.
Let cool for 15 minutes before serving
Serve in west-proof glasses and enjoy!

Apple Cider Hot Toddy

  • 4-6 oz apple cider
  • 1-2 cinnamon sticks.
  • 1 Tablespoon honey.
  • 4 oz bourbon
  • 1/2 Tablespoon lemon juice.

In a small pot, combine apple cider, cinnamon, honey, and lemon juice. Bring to a boil.  Remove from heat and stir in bourbon.

How to make chicken enchilada dip

Now that we live back in Texas most of the year I can get my Tex-Mex fix anytime. Which is amazing and that is why I’ve gained 10 lbs.  However, we are now quarantined, so back to making my own!

Chicken Enchilada Dip Recipe

Chicken Enchilada Dip Ingredients:

8 oz cream cheese, softened
10 oz enchilada sauce
¾ cup black beans
½ cup corn
2 jalapenos, diced
1 cup shredded rotisserie chicken, skin removed
1 package taco seasoning
2 cups Mexican cheese, shredded
1/2 cup Mexican cheese, for garnish
 
Directions:
Preheat oven to 350 degrees F.
In a large bowl add your cream cheese and enchilada sauce.
Stir to combine.
Add black beans, corn, chicken and taco seasoning.
Stir to combine.
Add the Mexican cheese, jalapenos.

Pour dip into a castiron skillet.
Bake at 350 degrees F for 25 minutes.
Remove from oven and add the 1/2 cup Mexican cheese.
Place in the oven for 5 minutes.

Sopapilla cheesecake is about to become your new favorite dessert! It is easy to make and packed with flavor. Recently, I have seen people referring to these are Churro Cheesecake Bars. Regardless of what you want to call them, they are freaking delicious. 
 
You do not make true sopapillas for this dessert but instead, cheat with crescent rolls. True sopapillas are made from a deep-fried dough that was introduced to Mexico and South America by the Spanish during the Columbian exchange.

Sopapilla Cheesecake Recipe

13×9 pan sprayed with Pam
350 degree oven

Ingredients:
4 cans of crescent rolls
2-8 oz. blocks of cream cheese softened
2 c. sugar-divided
2 tsp. vanilla
1 stick of butter
1 can of pie filling (optional)
cinnamon-to sprinkle on top or 1 tsp. to mix with topping

Directions:

Lay 2 cans of rolls on the bottom of the pan. Smoosh them together to make a crust.

Mix cream cheese, vanilla, and 1 c. of sugar and cream together.

Spread on top of rolls.

Top with pie filling (optional).

Add the last 2 cans of rolls on top.

Melt butter with sugar and cinnamon and pour over top.

Bake for 35 minutes.

If you’ve been looking for a yummy Tex-Mex dessert there’s almost no reason to look further than Sopapilla cheesecake! I get more compliments on this dessert than stuff I try way harder on.

Sopapilla Cheesecake Bars are an absolutely delicious dessert that is easy to make.

Ingredients

  • 2 8oz pillsbury crescent rolls
  • 1 C sugar
  • 3 tbsp ground cinnamon
  • 2 8oz cream cheese softened
  • 1 large egg
  • 1 tsp pure vanilla extract

Instructions

Preheat oven to 350 degrees and line a 9x4 baking pan with parchment paper.


Using a small bowl, combined 1⁄2 C sugar and 3 tbsp ground cinnamon; set aside.


Using a large bowl and hand mixer, beat the cream cheese, sugar, egg, and vanilla until creamy and smooth.


Sprinkle a little bit of the cinnamon sugar onto the bottom of the baking pan
Unroll the crescent rolls and line 1 can into the bottom of the baking pan and press the seams together.


Pour the batter into the baking dish and place the second can of crescent rolls on top of the batter.


Sprinkle the remaining cinnamon sugar on top and bake in the oven for 30-40 minutes or until a light golden brown.


Allow to cool completely before cutting into bars.
